Back in April, I made a hyper-seasonal pizza with green garlic, morel mushrooms and stinging nettle. It was a delightful taste of spring and a hit with Bill, Allen and the volunteers. The creamy sauce was bright, garlicky but not overpoweringly so and complemented the nettle nicely. Bunkhouse Acres can deliver green garlic by special order until mid June. The cost is $8 per bunch of 6 or $1.25 each if you buy more than 12 garlics (two bunches). Let me know how your sauce turns out.

This is a white pizza sauce that is grain free, gluten-free, vegetarian, keto-friendly and contains almost no lactose. I last used it on a pizza with nettles, morel mushrooms and fontina cheese. This recipe sufficed for four 8-inch pizzas.
2 green garlic stalks, white and tender green portions only
1 Tsbp lemon zest
2 Tbsp lemon juice
2 cups heavy cream
- Blend all ingredients until slightly thickened. WARNING: Blend for too long and you’ll have green garlic whipped cream.
- Use in your favorite pizza or pasta dish.
